LAWRENCE ZAFRA

Chef Lawrence is the President and founder of Atlas Culinary Institute and is also one of the senior chef instructors of the school. He graduated from a professional program in one of the culinary schools in Manila, and has worked as an Executive Sous Chef in a fine dining restaurant for 8 years. He broadened his knowledge in culinary by taking several classes in Thailand, Vietnam, Indonesia, and Malaysia. Furthermore, he and his wife runs a consultancy firm, Caliber Culinary Concepts, that customizes menus and kitchen training for clients. Chef Lawrence is a passionate advocate of Filipino cuisine and his objective in Atlas Culinary Institute is not only to equip the students to be internationally competitive but also to train them in preparing regional native dishes and become the future of Philippine cuisine.

Chef Camille, Pastry Chef Instructor at Atlas Culinary Institute, has been refining her technical skills, and sharing her knowledge to educate since the school operated. She earned her culinary degree locally and further trained by enrolling in specialized classes internationally. Her passion for the arts is visually translated in Atlas’s pastry modules. Aside from teaching, Chef Camille offers consultancy services together with her husband, and is also the acting administrator for the school.

Chef Harie works at Malen’s Pizza Pasta Bakeshop and Restaurant in Noveleta, Cavite. After working in the culinary industry for several years, he joined Atlas Culinary Institute in 2015, and is one of the chef instructors for cuisine. Apart from teaching, he is a professional photographer for food and special events. He is also the Ambassador for Photography of Artisan and Artist Japan.

After graduating from a culinary school and working in a restaurant, Chef Orvin tried his luck in a crew ship for a year. He has a penchant for traditional Filipino cuisine and appreciates its history & simplicity. He likes to go to different markets in the country sourcing for local ingredients and is always on the lookout for the best “carinderia”. Currently he is running Lime and Basil Thai restaurant together with his wife. He also does consultation and catering on the side.
